Vegan Chocolate Chip Cookie Dough
0I am a sucker for cookie dough. My family has essentially given up even having the intention of baking the cookies. We are just completely content with the dough itself. In my ‘not concerned about health’ stage my husband and I used to go to Papa Murphy’s, buy the tub of cookie dough, and eat that. The thought of that makes me cringe now! This recipe is a much better option! Our family makes it dairy free so my daughter, who has a dairy allergy, can indulge with us too. It is a win-win. Super easy and quick to make. Only 6 ingredients and you only need a blender. No eggs so you don’t need to worry about getting sick. And much less sugar and ingredients than any store bought option. Try it out! Then you won’t have to feel guilty about giving in to your sweet tooth!
Ingredients:
2/3 c raw cashews
1/3 c oats
¼ t salt
2 T maple syrup
1 t vanilla extract
¼ c chocolate chips (we use dairy free but anything will work!)
Directions:
Put the cashews, oats, and salt together in a blender or food processer. I love using my Vitamix for this!
Blend them together until they are the consistency of flour.
Next, add your maple syrup and vanilla extract.
Blend until the dough comes together in your blender/food processer.
Then add your chocolate chips! You can either stir them in my hand or you can pulse a couple of times (just a few seconds) in your blender.
Scoop the dough onto a plate. Using your hands, roll the dough into balls. You can make them whatever size you want. I usually do about 1-2 tablespoons per ball. If the dough is too sticky you can refrigerate it for about 30 minutes and it will be easier to work with.
Store the cookie dough balls in a container in the freezer….or eat them all right away!
